Chocolate surprise cupcakes

   I made some chocolate cupcakes but added some peppermint essence because chocolate, mint is a classic combination. Once the cupcakes had cooled I decided to make a hidden layer surprise. I cored the cupcakes before making a small amount of green mint buttercream and spooning it into the cupcakes. Next I layers in dark chocolate chips before topping with chocolate spread. To finish, I hid the centre by putting some cake on the top and sprinkling on some cocoa powder.

Fishing Birthday Cake

   My dad is into fishing and for his birthday cake I wanted to make him a cake along this theme. I made a small vanilla sponge cake and cut it in half before filling the sponge with thick vanilla buttercream and crumb coating the whole cake in buttercream. I then rolled out white fondant icing and covered the whole cake in it.

I then drew a template of a bass and coloured some fondant icing pale, marbled blue, before moulding the fondant to the template. I added fins and a tail to the body before using edible glue to stick it to the white icing. To finish the fish I used a small tool to add scales and then I covered it with glitter. Lastly I piped “Happy Birthday” in seaweed green gel icing.

Valentines Cupcakes

  Today I made some strawberry cupcakes and added some pink colouring to make them look romantic for Valentines Day. After cooking the cakes for 20 minutes I took them out to cool down and rolled some red fondant icing and cut some large red hearts and some tiny red hearts and stuck them on the right hand side of the large heart. I cored the pink cupcakes and spooned a small amount of strawberry jam in before trying a new piping technique. I made some pink buttercream and used a rose petal nozzle to pipe ribbons of icing around the edge of the cupcakes and gradually built up the icing before placing the hearts on the top of the cakes.
