Melting Moments

   These biscuits were very light and melted in your mouth – so I must have done something right! I beat margarine and icing sugar together before adding an egg. Next I sifted plain flour and cornflour, rolled into small balls and pressed with a fork. Once cooked to a pale gold I left them to cool on a wire rack.

   For the filling, I made a simple buttercream then added the rind and juice of 1 lemon. This made the buttercream very runny and I should have used less lemon juice. Lastly I sandwiched the cream between two biscuits!
